This is on the face of it and in fact a humble dish of green beans potatoes and tomatoes but cooked and combined together in this manner makes for a surprising and delicious main course. I made enough for four people as I wanted to create enough leftovers to have this again in this way or as a side dish accompaniment to something else. I used dried thyme instead of bay leaves and tinned cherry tomatoes with a tin of chopped tomatoes instead of the recipe stated ingredients. But otherwise I followed the cooking method as written, serving oven baked sweet potato fries and crusty bread. As was hoped my partner who isn’t very experimental nor a vegetable lover thoroughly enjoyed eating this as did I. This is a vegan dish well worth making
