Absolutely delicious! And so easy too. We added potatoes for a few extra calories since this recipe is so low in calories. I also removed all onion & garlic ingredients since I can’t eat them and substituted the chili powder with Fody Foods taco seasoning; still tasty even without them! I’m not a big veggie girl, but I really enjoyed every bite of this. Roasting them really makes a difference! Definitely coming back to this recipe again.
