I used low carb bread and used my own quick simple syrup: equal parts water and xylitol sweetener.
really nice recipe and very versatile. With the homemade syrup I have added other sweeteners and flavours such as vanilla extract 1 teaspoon, spice it up by adding cinnamon sticks in the syrup while simmering of fresh ginger, and a more fruity topping blend ripe peaches or berries directly into the syrup base.
