This turned out amazing! I thought the 1 1/2 tbs chipotle powder was a solid medium heat. A few alterations- I used fire roasted crushed tomatoes, subbed a little cumin for the coriander because I didn't have any, and I left out the water because I like a concentrated flavor. I also cut the beef into slightly smaller pieces (but still big chunks) to trim them better and cook them faster. Yes, there was still leftover sauce, so instead of adding the shredded beef back to the sauce, I added some sauce to the meat. I saved the rest of the sauce to re-purpose. I cooked it in the Dutch oven for 3 hours at 325 because I find it retains flavor better than the slow cooker. It was pull-apart tender and SO flavorful! This will be going into rotation.
