This turned out amazing! I thought the 1 1/2 tbs chipotle powder was a solid medium heat. I also used fire roasted crushed tomatoes, omitted the coriander because I didn't have any, and skipped the water. Yes, there was leftover sauce, but I only used a 2.75 lb chuck roast. So instead of adding the shredded beef back to the sauce, I added some sauce to the meat, and saved the rest of the sauce to re-purpose. I cooked it in the Dutch oven for 3 hours at 325 because I find it retains flavor better than the slow cooker. This will be going into rotation.
