I left out the onion but added onion powder and about 1/3 cup water. I doubled the spices, too. I probably didn't need to double the cayenne. The dough was the consistency of cookie dough before resting and frying. I used a #40 cookie scoop and got 24 falafel patties. These are delicious with a Greek salad and I imagine they'd be delicious in a sandwich too!
