Loved this so much! It's so rich and decadent (obviously, it's cheesecake), so perfect for a special occasion bake like a birthday. Baking cheesecake in a loaf pan is a great call, it makes it very easy to get an even rise and no post-bake-sinkage. I used ginger biscuits for the base which was very delicious. It's really easy to make each of the components and doesn't actually create much washing up if you make the frangipane layer in the same blender as you just used to make the biscuit base. If you use gluten-free biscuits for the base then you'd have an amazing GF dessert.
