I decided to try something new for my family this Taco Tuesday, and I was a bit worried my oldest daughter wouldn’t like it because she's so picky. But to my delight, she had no complaints—she said it was average but still enjoyed it. My beautiful wife and I absolutely loved this fresh twist on our favorite tradition. Although I'm not usually a big sweet potato fan, this pairing with the taco meat and toppings was fantastic. It’s definitely going to be our new go-to dinner—quick to prepare and incredibly budget-friendly for two days of meals!
