Taco Stuffed Sweet Potatoes

I acquired very big sweet potatoes from Aldi's. I followed the instructions, although, for 2 servings I used green salsa instead of red. I served alongside a cesar salad. I enjoyed how filling it made me feel. I also drank hot cider for the holiday season. It really hit the spot for me for someone who isn't big into the holiday smells and tastes. Just enough to fill the spirit and not sweet, but savory.

Someone in the comments said he baked his potatoes for 45 mins, I baked mine for 40 mins, just take that into consideration as the recipe shows it would take around 20 minutes or so. Other than that, I want to eat this every day now.

I didn't use ground beef, I made a lentil taco filling recipe I found on here and it was GREAT!

I loved it, but I recommend trying to prepare it when you have time to spare! Tip: I added Japanese barbeque sauce to the meat and it gave it un toque de locura 🔥

The flavors were incredible, a total taste explosion. Using sweet potatoes was genius. It's such a cool idea! I made mine extra spicy with my own blend of spices. (Cumin,black pepper, cayenne, smoke paprika, salt, garlic powder, onion powder, and chipotle chili powder)

South African, money saving points: What an awesome and versatile recipe and so easy to work with! (Working with receipes for Dyabetic type 2) I improvised a bit on all the ingredients for price and availability. • Sour cream - substituted with about 2-3 tsp of cream cheese and 4-6 tbp plain yogurt - make to your hearts desire. • Very large white sweet potatoes (1x = dinner and lunch - if on a carb-conscious eating plan). • • Boil for about 25 minutes, then grill in the oven for about 15 minutes, and they become crispy and caramalised. • Taco Spice - Cape Herb & Spice Taco, half a pack. (Depending on the spice level wanted, but it can be salty too, so look into adding fresh chilies or cayne pepper for a kick) • Mince - +/- 600g, definitely drain excess oil and juice before adding "chunky salsa" - enough for 2 adults and a pre-teen for dinner and 2x adults for lunch. • Chunky Salsa - tomato and onion canned mix (Don't use Boerie relish) I made a side salsa, with jalapeño and yellow pepper for the freshness. Added a tsp of vinniger and lemon juice. Fresh rocket, and parsley. Mexican cheese - mozzarella or even a gouda will work, melted on top. A subtle cheese works well, based on the spiciness of the dish. If salt is needed, use Himalayan pink fine salt. Not as strong as normal iodated salt.

Got fresh salsa in medium from aldi. Used extra garlic. Sour cream made it even better. Used pepper jack slices.

I exchanged the sweet potato with a butternut and it still came out perfect. Thank you.
