Made this recipe to pair with Cajun chicken and green beans w/ caramelized onions.
I did make some modifications as well:
-I made a liquid mixture to combine with the mashed potatoes that consisted of milk, butter, cream cheese, 4 heads of roasted garlic, salt, pepper, onion powder, and nutritional yeast (best addition ever for mashed potatoes if you’ve never tried it!)
-I brought this mixture to just below a simmer and once the butter was melted and cream cheese was very soft, I used an immersion blender to create a velvety sauce!
-I slowly incorporated this sauce into the potatoes and finished with mixing in the minced chives.
I followed the butter, cream cheese, and milk ratios, but did find the recipe called for a bit too much liquid. Would suggest reducing milk by maybe half a cup less.
Would make again with those modifications!
