This cake is one of my favorite strawberry desserts in terms of effort and taste - it’s a simple batter that is likely ingredients you already have and very forgiving. I make it with Oatly no problems, sometimes slightly less ripe strawberries and it’s fine. I love how the fruit cooks down to be jammy and the cake is fluffy and just the right sweetness. It comes together quickly - only thing is mine usually takes the full 60 min. Highly recommend!
