Delightfully rich without being too heavy. I replaced 1/4 of the flour with banana powder (unsweetened banana chips run through a clean spice grinder until fine) as an experiment on flavoring. I’m sure if I had some plain crêpes to compare it would have been notable, but I didn’t detect too much of a difference 😂 They freeze well, too; three crepes to a bag, each separated with a bit of parchment paper. Microwave for 30 seconds on either side and they’re good as new!
