In my years as an inn keeper, this was my go-to Blueberry Muffin recipe. One bowl, a whisk and a spatula. That’s it. Moist on the inside with a sugar-crusted top, and loads of blueberries - they’re always popular. I must have made this recipe (and variations of it) literally thousands of times. So reliable I can make them at 5am without coffee!
I consider that a true test of simplicity. I don’t do much before my coffee. 😂
