Tasty recipe, and you'd never guess it was meat-free, but a bit over-complicated in my view: I didn't do any blitzing, left out the jar peppers and the refried beans (plenty thick enough without), roasted the peppers not fried them, and it also doesn't take 1.75 hours! I added tomato puree, a veggie stock cube and a swirl of molasses to give the flavour a bit more depth.
