It was SO delicious! I made a couple modifications to make it vegan:
1. Swap chicken broth for vegetable broth
2. Used 14 oz of Impossible sausage
I also:
1. Added about six cloves of pressed garlic when sautéing the onions
2. Next time I would roast the squash about 5-10 min longer
3. My family (not following a vegan diet) added shredded mozzarella cheese on top
