Notes:
When grilling the vegetables, make sure to not overcrowd the grill. This will prevent the vegetables from getting charred and cooked unevenly.
You can use any combination of vegetables that you like for this recipe.
If you're trying to keep this dish on the healthier side, you can use a reduced-fat mozzarella or even skip the cheese altogether. The grilled vegetables and tomato sauce will still make for a delicious lasagne.
