I made this soup. I was looking for something cool in the heatwave we've had. It was really tasty. I was afraid it was going to taste like a watery guacamole, it did not! It was really nice and refreshing the citrus and the yogurt added a nice crispness. 100% recommend. A few things to mention: mine came out with a pudding consistency. You could probably add more vegetable stock if you want it thinner. Next time I make it I would cut the recipe in half. The avocado makes this soup very rich and it has a wonderful mouth feel. I wound up eating about half a serving next time I would cut the recipe in half, the avocado does oxidize (took about 36 hrs) which tastes bitter to me.
