For the soup:

juice only
1 bunchcoriander
250gplain yoghurt
300gvegetable stock

For garnish:

Step 1
In a blender, purée all ingredients for the soup. Chill for 30 minutes.
Step 2
Garnish each portion with chopped cucumber, pine nuts and olive oil and serve with toasted bread.
