This turned out delicious, but like a lot of the other notes, I changed a lot. I added a big scoop of greek yogurt, toasted pine nuts, and after everything was finished I added the zest of one lemon and the juice of 1/4 a lemon. I also only used one onion and I still feel like that was way too much. next time I will use half an onion and way more spinach. I didn't cook the spinach at all, I just tossed it in at the end and let the residual heat of the pasta wilt it a little.
