Used a few tbs of red wine vinegar instead of red wine. Forgot to add Dijon, didn't miss it. Browned meat with worstershire, mince garlic and onion. Added to crock pot with better than beef bullion. Took out most of broth and added cornstarch with remaining beef broth and brought to boil to thicken. Added back to crock pot and sour cream right before serving.
