This is amazing! My kids are experts at sniffing out my secret healthy option recipes and flatly rejecting them, but not this time. They loved them, and I did too. Don't tell anyone, but I omitted the chocolate chips (at my own risk) and they were still fab. Actually I made them with white beans, and used date syrup instead of maple, and I also used steel-cut oats instead of quick oats (all I had), which gave it a kind of inner crunch. I am guessing this is a really adaptable recipe.
