I subbed all the veggies with frozen corn, peas, broccoli, carrots, cauliflower, and fresh chopped butternut squash. I basically doubled the quantity of the soup, and used water instead of stock. Also added herb de Provencal. Subbed 1 tb coriander, 1 tb cumin, 1 tb roasted cumin, pepper, paprika, 2 tsp haldhi for the curry powder. Did everything in the slowcooker for 3 hours at high. Did not use celery. Only did 2/3 cup dal.
Still only used 1/2 can coconut milk even though doubled quantity of water. I didn't rally doubled spices either. Probably used 2.5 tsp salt, and also a tsp of bouillon
