This was my first time cooking pork and they turned out WONDERFUL. I didn't have smoked paprika so I just threw in a pinch of cayenne pepper and cumin. I was nervous about the pan sauce because the sourness of the vinegar was overpowering upon taste-testing, so I added more broth (which I used instead of stock) and salt and honey, but I think I could've waited for it to reduce more because that seemed to help too.

Spice rub:
1 tbsp flour
1 tsp ๐ถ๏ธ powder
1 tsp ๐ง powder
1 tsp ๐ง
powder
ยฝ tsp smoked paprika
ยฝ tsp pepper
Season both sides w/ ๐ง, set aside 30 mins out of the fridge.
Afterwards, pat chops dry, rub with the spice mix.
Heat 1 tbsp oil medium-high. Once hot and shimmery, add pork, cook until golden, 2-3 mins.
Flip pork. Fattier side = use tongs to hold down until it sizzles & browns slightly, ~30 seconds.
Reduce heat to low, cover skillet with lid, cook 6-12 mins until 145โฐ. Check for doneness at 5 mins and then every 2mins from there.
Move to plate, foil.
Medium-high, 1 c. ๐ stock, ยพ tbsp ๐ cider vinegar, 2 tsp ๐ฏ. Scrape up burnt bits at bottom of pan. Simmer until reduced by half. Taste, adjust, slide off of heat, swirl in 1 tbsp ๐ง once no longer simmering. Put pork chops in skillet.
