The vegetables make the dish! I boiled the carrots and added potatoes (and boiled those as well) before adding to the pan, and they turned out perfect. Though the instructions say to coat the chicken in the marinade after adding to the pan, I skipped this step. The flavor was still there without it being overpowering. Would have been great with some brown rice.
