These are so soft and chewy, exactly the texture I was looking for!! The recipe was easy to make, no chilling or creaming butter required. I made a few changes:
- Substituted the egg with a little soya yogurt and egg replacement powder
- Dairy-free margarine and veg shortening instead of butter
- no chocolate chips
- replaced 60g of plain flour with strong bread flour
- added a tablespoon of Five Spice
- sprinkled the tops with brown sugar once baked
