To get the pasta to cook properly without qorrying about the dairy curdling with all the heat, i have adjusted the recipe slightly, i follow the directions untill it says to add the broth. After adding the broth, i wait for it to come to a boil and add the pasta. I wait until the pasta is about half cooked, stiring only a couple times. Most of the broth should be soaked into the pasta, then add the cheese and stir it in to let it melt well. Then i add the milk/cream and continue with the directions. If i were to have problems with the pasta not cooking or soaking up too much water i would add 1/4c water, or additional broth at a time before adding the milk/cream. With this adjustment i was able to make this dish in about 40 minutes (prep and cook time total). I have made this before and had a hard time getting the pasta to cook in a reasonable amount of time, but the flavor is lovely, and i wanted this to be a week night dinner option!
