If you love chilli and spicy food this is amazing. I had it at Rosa’s Thai restaurant, loved it and had to recreate at home. The real heros are the roasted chilli paste (to die for) and the Thai basil. This recipe suggests pre stir frying the aubergines, unfortunately this does require quite a bit of oil, so next time (a given) I will bake them to limit the oil. The roasted chilli paste I used had shrimp in it but everything else I used veggie.
Update - baked the aubergine this time, took a good 40mins but great to not have to add the oil. Next time no sugar! The paste is sweet enough
