2red chillies
2 tablespoonsvegetable oil
2 tablespoonsroasted chilli paste
available from Asian supermarkets
1 tablespoongranulated sugar
1 tablespoonoyster sauce
1 tablespoonlight soy sauce
1 teaspoonnam pla
thai fish sauce
1 tablespoonvegetable
Thai basil
Large, available at Waitrose
Instructions
Step 1
Slice your aubergine into chunks then lightly coat each chunk with corn flour.
Step 2
Fry in a pan with sunflower oil until golden brown and set them aside.
Step 3
Pound the garlic and chillies together using a mortar and pestle.
Step 4
Heat the oil in a wok set over a high heat, then stir-fry the garlic and chilli mixture until golden brown.
Step 5
Add the roasted chilli paste, stir well, then mix in the aubergine chunks.
Step 6
Be gentle so they don’t break into pieces.
Step 7
Add the sugar, oyster sauce, soy sauce, fish sauce and chicken stock.
Step 8
Stir-fry for 3-5 minutes
Step 9
Stir in the basil leaves and remove from the heat.
Step 10
