Based on feedback I read in the comments, I boiled the gnocchi for 2-3 minutes after they were all floating to ensure that they were fully cooked and not chewy, and it turned out perfectly! They had the texture of thick pasta. I also modified the sauce slightly (just because I know what I like). I added 1/2 cup parmesan cheese, 1 tbsp basil, and the juice of 1/2 lemon before blending. I loved it, but again, the sauce modifications were to my personal taste. Will make again!
