So I understand this is an ancient grain oh, I read about it before in Homebrewing for beer and for people that I believe are gluten free. Do you know if it is gluten free? I was wondering why you chose spelt I've never tried it. I do like doing some of the Artisan breads that are no knead breads. I like to add a lot of herbs and I've even tried adding like Parmesan cheese haven't quite dialed it in just right but they're not too bad. Really good with soups as the breads are dense.

As far as I know, it's not gluten-free. I chose spelt because I've read some articles about its benefits on health, it's rich in fiber, it does not cause bloating, etc. And I liked the taste so now I used it very often and I like to mix it with other flours like buckwheat or rye in my bread. I've also started adding sunflower kernels and pepitas to the dough. Which herbs do you add? I haven't added any herbs yet but that sounds like a good idea.

Rosemary, thyme, dill, caraway seeds...stuff like that. I found some recipes on pinterest I think
