To make it low carb, we leave out the rice. We put in 1 lb. of frozen corn, 2 cans of original rotel(no salt), 1 can black beans and kidney beans (no salt), and green chiles. Everything goes in a colander to rinse, drain and mix, then spread in a 13x9 pan or 3 quart Casserole dish. We find baking it at 400 degrees for 30 minutes helps heats it thoroughly. As for the cheese and sour cream, we add these after the Casserole is done baking. We also put the mixture in soft burrito wraps. Delicious and healthy!
