I was skeptical of this recipe, especially the pineapple part. I used 1/2 of the pineapple called for, swapped in chicken thighs, and added a package of frozen Asian-style blend of vegetables instead of the sugar snap peas. The seasoning blend used in this had a pleasantly interesting blend of garlic, ginger and zesty peppers. And adding lime at the end, a must! My husband usually doesn’t go for this kind of dish, and he really liked this one. We may do it again…
