This recipe was very tasty. In place of spinach, I substituted arugula for its peppery-ness. I omitted the salt and pepper as there was enough salt and flavoring from the sausage, arugula and herbs. I may try adding diced celery for the natural salt component, next time. The broad range of textures from the crunchy pecans to the creamy texture of the squash was very fulfilling. My husband, the meat-and-potatoes-picky-eater, said unprompted, this is VERY nice. I agree.
