I’ve made these a few times, and I’ve found some helpful tips for best flavor (if you have some extra time on your hands). I let my potatoes soak in water for about 20 mins prior to chopping to make them less starchy. I also found it easier to chop all the potatoes and put them into a gallon ziplock, then add the olive oil, seasoning, Parmesan, etc. I shook the bag up really well and they were all evenly coated. This was easier than the past times I’ve tried tossing them in a bowl. Side note: I prepped the ingredients in the afternoon and planned to make them with dinner. I left them in the ziplock bag in my fridge for 4 hours or so. Then I baked them in the oven. They tasted soooo good this way! They really absorbed all the flavors. If you have time in the morning or afternoon to prep them ahead of time I suggest trying it that way :)
