Could you salt the noodles before using them? To sweat out the moisture before cooking. You’re basically only adding them to heat up. If you don’t salt them, you’re adding more liquid.

I’ve found with zucchini noodles they much less watery if you sprinkle with salt and cook in the oven on a baking sheet.
