Too soggy. All the ingredients were fine, but suggest roast halved Roma tomatoes (less juice) in a pan, then add the other ingredients on high heat for a bit, then deglaze pan with the lemon juice (a little liquid overall at this point), then simmer for 30-40 min, and add the quartered yellow potatoes in the last part so they cook but don't fall apart.
Do not cover the beans, fill 1/4 of the beans with lemon juice + some water. The roasting the beans in the pan should help keep it's shape and not fall apart later on.
