Loved the simplicity (and inexpensiveness) of this recipe! Good intro to curry, and not too spicy. However, it turned out very coconut-forward, which isn't necessarily bad, but I would prefer it more savory. I also added a tsp cornstarch in a slurry to thicken it. Next time I make this, I'll use olive oil in place of coconut oil, and add potatoes and carrots.
