Tasted wonderful but not pretty to look at. Used a lot more EVOO when coating vegetables, used 2 heads of broccoli and the whole head of cauliflower instead of what the recipe called for.
Also, roasted the vegetables on the top rack for 18 minutes, more time than recipe called for because used more vegetables.
Moved the rack to the middle when adding the shrimp.
When using frozen shrimp, thaw and pat dry before adding to bowl.
