I added garlic and caramelized the onions to amp up the flavour.

I've made it with red onion and even cucumber to give it more flavor.

I like cumin, but in keeping with the tuna salad substitute feeling, I would add dry mustard powder for sharpness and black garlic powder for umami. Salt and pepper as well if you already hadn't.

I would try tarragon and black pepper?
