Chickpea Salad Sandwich

⭐⭐⭐—liked it. Such an easy vegetarian friendly lunch! A great recipe to incorporate into a "Meatless Monday" plan.

Turned out really well. I added banana peppers and spinach leaves to my sandwich. Might also be good with a slice of cheese. Could use more mayo.

I like toasting the bread and adding pickles to the sandwich. Such an easy and quick lunch!

I used a tablespoon of Dijon mustard, added minced garlic, a few dashes of Ethiopian Berbere seasoning, and a dash of lemon juice. I puréed one can of chickpeas with the onion and garlic and some olive oil, and roughly mashed the other can with a fork. Delicious!

This recipe was okay and a good vegetarian option, but there is a flavor that is missing that I can't quite put my finger on. Any suggestions?

Holy moly this was good. Very much like an egg salad. I'm shocked at how much I enjoyed this ETA - a few months on and I make this almost every other weekend. I just used the food processor to smash up the chickpeas and mix in the mustard and mayonnaise.

This is so flavorful and good! Very easy to make as well. I used fresh dill instead of parsley, since I had that in my garden, and green onions instead of regular onions since I had some left over that I needed to use. Very good, but would also be fun to experiment with different spices/herbs to switch things up.
