If you don't want to make cashew butter, you can just blend some cashews with the stock / water until creamy. It doesn't even matter if you don't have a high powered blender and it doesn't get completely smooth as some texture would lend itself to the soup. Less work to clean up after a blended liquid than a nut butter :)
