I changed a few things, but it turned out great.
I used half chicken breasts, half chicken thighs.
I used regular canned diced tomatoes, but next time I'll probably try to get the fire roasted kind. I added twice the amount of garlic called for—no regrets. And when I make it again I'll wait until later to add the bell pepper so it doesn't turn to mush. I'll probably also go a little heavier on the spices.
