We loaded our bowls up with lots of lettuce and veggies and boy was the end result beautiful (vermicelli underneath everything)! Another common Vietnamese addition you can make to this dish is to add some roasted peanuts on top. This is a great dish and we can't wait to make it again.
Unsolicited tip: every household mixes their fish sauce differently, and we use the 3-1-1 method. 3 parts water, 1 part white sugar, 1 part fish sauce. Add Huy Fong chili garlic sauce, grated garlic, and lime juice to taste and you've got a winner (at least we think so).
