Cookie + Kate's recipes are always great. This recipe was so simple and will be the pancake recipe I use forever.
I have pretty flavoursome olive oil, so I went with a coconut oil-based vegan butter which I melted in the microwave (was closer to 3 Tbsp).
Topped it with some apple pieces pan fried in vegan butter and brown sugar until soft and crispy on the edges.
Oh, keeping them warm in the oven is essential - don't skip that!
