I kept the meat amount the same but doubled all the veggies, and added 2 whole carrots shredded and 2 celery stalks shredded. I also made extra of the topping because we love that stuff. I don’t feel like I needed the extra 3/4 cup water that is called for before adding the cheese, it made it a bit too sweet. Pretty easy meal without too much clean up. We liked it and even the kiddos ate some. Topped with shredded lettuce and fresh tomatoes. Would be excellent with some green onions too.
