Ingredients

¾ cupwater
cold
1 poundlean ground beef
1onion
chopped
1green bell pepper
chopped
8 oztomato sauce
1 cupcorn
¼ cupblack olives
chopped
½ teaspoonchili powder
cumin
1 cupshredded cheddar cheese
sour cream
fresh tomatoes
sliced
shredded iceberg lettuce
Tamale corn meal topping
Instructions
Step 1
1. Preheat oven to 375

Step 2
2. Brown ground beef. Add onions and green pepper. Cook until soft.
Step 3
3. Add tomato sauce, corn, black olives, salt, chili powdered and cumin. Add 3/4 cups water. Simmer 15 minutes, then add cheese and stir until melted
Topping
Step 4
Stir salt and cornmeal and 3/4-1 1/4 cup water over medium heat. Bring to a boil and stir until thick. Watch carefully as to not burn.
Step 5
Take off heat and add butter. Mix and spread evenly on top of casserole.
Step 6
Bake uncovered at 375 for ~40 minutes. Serve immediately with sour cream on a bed of lettuce. Top with fresh tomatoes.
