I wanted to try mashed cauliflower, and I found this recipe. It was easy to make. I did change the buttermilk to non-fat oatmilk since we don't use regular milk in our home, and instead of using an immersion blender (don't have one), I let the cauliflower cool slightly and used my food processor. Worked well and looked just like mashed potatos. Even my 1yr loved it. ๐
