My family loved it! Onions took well over an hour to caramelize. I weighed out 3 lbs of cut onions rather than just 3 large onions. I cut them super thin on the mandoline and while that made them easy to eat I probably would cut just a bit thicker next time. I took suggestions from other comments that said to add thyme and Worcestershire sauce - so I did. It was delicious with the additions but I’m sure it would still be great without. Need to go buy some soup crocks - had to use my oval individual au gratin dishes. Definitely a keeper recipe in our house. Great on a cold, damp day.
