This was SO GOOD. As someone who recently found out they should avoid gluten/dairy, I was stoked to be able to make a comfort food that left my stomach happy. I soaked the cashews is near boiling water for 45 minutes, adding hot water when the existing water became just warm. I forgot carrots so I added more celery and potatoes. I used baby Yukon golds and felt that did wonders for ease of prep. Instead of poultry seasoning, I combined a variety of seasonings to my heart’s content. I used Italian seasoned rotisserie chicken from HEB and topped with parsley. Go heavy on the seasonings!
