Updated approach: I followed the recipe as-is but added 1/4 cup of light stock to the sauce, let it reduce slightly after adding to the turkey, then thickened a bit with cornstarch slurry. It gave me the slight sauciness I'm looking for but wasn't too salty. I'll be doing that from now on.
