Honestly I was skeptical but this turned out so good! Tastes surprisingly like mac n cheese (though you won't be fooling anyone). A couple changes for the next time I make it- I tossed the veggies first w a bit of oil before baking and needed two baking sheets. Next time I'll use more oil and lower cooking temp to 350, some of the veggies stuck to the pan (even with parchment paper) and burned. Ended up w too much sauce, I'd either cut the sauce a bit or double the pasta. Also, I used vegan parm instead of nutritional yeast 👌
